In general, egg powder is an excellent product, light and cheap, which can be stored for up to 10 years even outside the refrigerator. Technically, if vitamin C was present in it, then a person could live peacefully only at the expense of such a powder.
Just to begin with, I will tell you exactly how you should not act and why. So.
- My first “experimental batch” never dried completely, turning into oily lumps. Because there was no need to add oils and spices in the process.
- The second batch turned into “rubber balls” because I set the oven temperature too low and kept it there for too long.
- The third batch did not dry out at all, since I took the wrong dehydrator. It was necessary to take a model with a fan for more efficient air circulation.
- The fourth also did not work out – it also could not dry completely, because I used too large pieces.
But for the fifth time, after my mother’s advice, I finally succeeded. (So, guys – mom needs to obey, mom knows how to cook all sorts of useful things).
So, the recipe.
First, take a non-stick skillet. And start frying scrambled eggs on it. This should be done until all the liquid visually disappears, and then another couple of minutes. It is advisable to cut the mass into small pieces in the process – this promotes the evaporation of moisture. And yes, you need to set the fire not too high so that the eggs do not burn.
Then I collected what I made and chopped it in a food processor. It turned out to be very useful – I shouldn’t have done this before.
The crushed mixture went to the dehydrator. It must be spread evenly and not too thickly. Out of 18 eggs, there was enough material to fill 2 trays.
Then I set the temperature to 145 degrees and left the device working overnight. In the morning, we got small crispy orange egg balls.
Now the last step remains – to pass the dry product through a manual or electric mill to get exactly the powder.
The result is something that looks like cornmeal. However, there was not enough material from 18 eggs even to fill a pre-sterilized half-liter jar. So keep that in mind as you cook.
Well, then – remove, if possible, air, hermetically seal the jar with a lid and sign the date of the blank on it.
It is necessary to store this product without access to oxygen and water, as well as in a dark and cool place, such as a basement or cellar. And after opening the sealed container, you will have another month to consume its contents.
How to use egg powder?
Different ways. Egg powder is used in baked goods instead of regular eggs, and maybe as a thick omelet or scrambled eggs. Only it needs to be “restored”. To do this, mix a tablespoon of powder with a tablespoon of water or milk, and then mix thoroughly (you can use a blender). It is best to use a blender as this will eliminate the graininess of the finished product.
And the best thing is that anyone can make such an egg powder, even if they don’t have any specific skills or technique. This is especially true for those who have domestic chickens. Although they are regularly laid, it is better to prepare an “excess” of eggs in case of urgent need.
